GLAZE
2 tablespoons unsalted butter
¼ cup honey
¾ cup orange juice
1. Melt butter in a small skillet. Add honey and let thicken.
2. Add orange juice and whisk until sauce has caramelized, tilting skillet to evenly distribute.
TO PREPARE HENS
2 hens (approximately 1–1½ pounds each)
2 tablespoons soy sauce (1 tablespoon for each or enough to cover both hens)
Butter
1. Preheat oven to 550°F.
2. Clean and wash hens in salted water. Pat dry with paper towels.
3. Loosely fill hens’ cavities with stuffing; rub with soy sauce and soft butter. Place hens in a baking pan large enough to accommodate them without crowding. Bake uncovered in the preheated oven on the middle rack for 30 minutes or until dark golden brown.
4. Remove pan from oven, lower heat to 350°F, and baste hens generously with warmed glaze.
5. Return pan to oven, frequently basting hens with drippings. Bake approximately 45 minutes, depending on size. Drum-sticks should move easily (do not over-cook). Tent hens with foil if browning too fast.
6. Remove hens from oven; spoon out stuffing and reserve. Place hens on a warmed large platter, basting for the last time. Loosely cover with foil and let rest in a warm place until needed.
